Beef and Lentil Bolognese

If you want to improve your diet, save a bit of money or simply eat more plants, this bolognese is the perfect dish to try! Packed with plants and flavour, this is a great example of how you can enjoy traditional dishes while bringing more balance to your meals.

Preparation time: 15 minutes. Cooking time: 35-40 minutes. Serves 4


Ingredients


2 tbsp vegetable oil

1 onion, diced

3 garlic cloves, crushed

250g beef mince

3 tbsp tomato puree

1 tbsp Worcestershire sauce

2 tbsp mixed herbs

2 tsp smoked paprika

A tin of green lentils, drained and rinsed

1 carrot, grated

100g mushrooms, finely chopped

400g tin of chopped tomatoes

300ml beef stock

2 bay leaves

300g spaghetti, uncooked weight

Parmesan to serve, optional


Method


1. Heat the oil in a large pan over a medium heat and saute the onion and garlic for 2-3 mins until softened

2. Add the beef mince and cook until evenly browned

3. Stir in the tomato puree, Worcestershire sauce, mixed herbs and paprika

4. Add the remaining ingredients, bring to the boil and stir well

5. Reduce to a simmer and cook for 30-35 mins, stirring occasionally

6. Meanwhile, cook spaghetti as per the packet instructions

7. Remove the bay leaves from the bolognese sauce before serving on top of the spaghetti

8. Sprinkle some grated parmesan cheese on the top, if you like
