Chocolate Orange & Cranberry Granola

Mix up your breakfast with this festive-inspired Chocolate Orange & Cranberry granola recipe. Enjoy with Greek yoghurt and a serving of winter fruits, such as apples, pears, blackberries or cranberries. A recipe sure to help you get out of bed on those colder mornings!

Preparation time:  10 minutes. Cooking time:  25 minutes. Serves 10.


Ingredients


200g rolled oats or cereal flakes of choice (I use half rye and half barley flakes)

50g sunflower seeds

30g chia seeds

10g cacao powder

80ml maple syrup

2 tbsp vegetable oil

40g cacao nibs

50g dried cranberries

100g Terry's Chocolate Orange minis, chopped into chunks

Zest of 1 orange


Method


1. Preheat the oven to 180°C fan / 200°C.

2. Combine oats/flakes, sunflower seeds, chia seeds and cacao powder.

3. Stir the maple syrup and vegetable oil together.

4. Add this to the dry ingredients and mix to coat evenly.

5. Spread the mixture onto a lined baking dish and gently push the mixture down with the back of a spoon.

6. Bake for 25 minutes, turning halfway through to ensure it browns evenly.

7. Remove from the oven and leave to cool before breaking into chunks.

8. Add the cacao nibs, dried cranberries, chocolate chunks and orange zest.

9. Store in an airtight container for 1-2 weeks.
