Whipped Feta with Honey Roasted Carrots

This creamy whipped feta dip, topped with honey roasted carrots and fresh dill, is the perfect addition to any festive meal. Preparation time:  20 minutes. Cooking time: 35-40 minutes. Serves 6-8.


Ingredients


For the roasted carrots:

2 tbsp olive oil

1 tbsp honey

300g carrots

1 tbsp fresh chopped dill


For the whipped feta:

200g block of feta

3 tbsp Greek yoghurt

3 tbsp olive oil

Juice of 1 lemon

10g fresh dill, chopped

Salt and pepper, to taste


Method


1. Preheat your oven to 200°C fan / 220°C.

2. Chop the carrots into large chunks and drizzle over the olive oil, honey and dill. Mix well to ensure they are evenly coated before spreading out on a roasting dish.

3. Roast until golden and tender, around 35-40 minutes.

4. Meanwhile, prepare the whipped feta by adding all of the ingredients to a blender and processing until smooth and creamy.

5. Spread the feta over a serving dish and top with the roasted carrots and an extra sprinkle of fresh dill, if you like.
